Teaming up with Heliservices, THE PENINSULA in Hong Kong has launched a series of "Flightseeing" packages that include a 30-minutes helicopter tour around Hong Kong before you disembark on the hotel's rooftop helipad for lunch or dinner. You can go buffet-style at The Verandah, Chinese at Spring Moon, French at Gaddi's, Swiss at Chesa, or Pacific Rim at Felix (the latter is available only for dinner, while Chesa is available only for lunch). While the menus are set, you're given a lot of options. If you can't make up your mind about which restaurant to choose, you can opt for a "Culinary Journey", an experience that starts with canapés at The Bar and then progresses to delicate shark's fin soup., braised abalone and other Cantonese dishes from Spring Moon before stopping off for desserts at Felix's Long Table. The price of this fly-and-dine experience ranges from HK$5,440 for two or HK$5,880 for four for lunch to HK$7,400 for two or HK$9,800 for four for the Culinary Journey. The Peninsula also offers the Grand Chef's Table, which for $48,888 per group of up to 10 guests, offers a gastronomical journey of all the hotel's outlets, with eight chefs in attendance for your evening.

FLAMING APPLE SKILLET TART

Ingredients:
Basic Crepe Dough
Nonstick Cooking Spray
2 Granny Smith apples
3 tablespoons unsalted butter
1/3 cup sugar combined with 1 rounded teaspoon ground cinnamon
2 tablespoons heavy cream
6 tablespoons Calvados or Brandy
Vanilla Ice Cream

Prepare a thin crepe batter. Peel and core apples. Using a mandoline or sharp knife, slice the apples into 1/8-inch sections.

In a small sauté or crepe pan, melt the butter over medium heat. Add _ cup crepe batter, forming a circle in the center of the pan. Heat crepe batter for about 1 minute or until just set. Remove pan from the heat. Place sliced apples in concentric circles around the batter, using a wooden skewer to arrange. Return the tart to medium heat. Shake a generous sprinkling of cinnamon & sugar mixture over tart and continue cooking until tart slides easily in pan. Flip crepe. Add a generous pat of butter to the pan. Spread a thin layer of crème around the edges of the crepe. Cook approximately 1 minute more, or until edges appear a rich golden brown. Flip tart and continue cooking for about 20 seconds longer, or until set.

Serve the tart on individual plates with a scoop of Vanilla Ice Cream. Drizzle a spoonsful of Calvados or Brandy atop the warm tart and carefully ignite with a match or lighter, being careful to avert your face. Place a generous scoop of ice cream atop flames and serve in a well dimmed room. Enjoy!

TIP: These tarts can be assembled well in advance and heated just before serving.
