Even city slickers will love exploring beautiful Kauai on horseback. CJM COUNTRY STABLES offers a 2-hour 'Hidden Beach Ride' which unveils a range of stunning views, from verdant pastures to coastal vistas. Sure-footed mounts carry you over a sandbar and stream, past lovely beaches and bays and under stately ironwood trees, providing plenty of picture-taking opportunities all along the way.

PRINCEVILLE RANCH STABLES' most popular option is the 4-hour Waterfall Picnic Ride. Participants get a taste of paniolo (cowboy) life traversing wide-open meadows, past grazing cattle and flower and fruit trees, to a clearing where you dismount and descend down a short trail to fern-lined Kalihiwai Falls. Here, you savor a picnic lunch and an invigorating swim before heading up the trail for the leisurely ride back to the barn.

Adventures are drawn to Lanai for its natural beauty as well as its snorkeling, scuba diving, golf, horseback riding, sporting clays, hiking, hunting and offroad exploring.

Accompanied by knowledgeable guides from the LANAI ECO-ADVENTURE CENTRE, you can get acquainted with the wonders of the marine world as you kayak and snorkel off pristine Keomuku and Shipwreck beaches. From December through April, tour-goers enjoy an additional treat, as pods of humpback whales can be seen cavorting in the channel between Lanai and neighboring Molokai. These gentle giants migrate to Hawaii from chilly Alaskan waters each year to mate and bear their young. Kayaks, snorkeling gear, an instructional clinic, beverages and snacks are included.

MAUI ECO-ADVENTURES showcases the hidden beauty of the Valley Island. The 6-hour Rainforest/Waterfall Hike meanders along a mountain trail bordered by foliage and terraced fields where the ancient Hawaiians once grew taro. The highlight of the hike is a swim in a pool fed by a waterfall that cascades 60 feet down a rugged sea cliff.

Go up, up in the air for an unforgettable view of the Valley Island with HANG GLIDING MAUI. Like a bird in flight, you'll soar over beaches, valleys' waterfalls, rainforest, the lush district of Hana and the massive crater of Haleakala Volcano, which could contain the entire island of Manhattan. Their unique mode of transportation is an open-cockpit Airborne Trike, an ultra light glider powered by a reliable aircraft engine. Following the instructions of the pilot, intrepid passengers are even allowed to take the controls.

MAUI JEEP ADVENTURES' half-day Makai (toward the sea) and Mauka (toward the mountains) tours transport visitors to pristine sites at 23,000-acre Ulupalakua Ranch that previously were not open to the public. Both trips are rugged, taking passengers in 8-seat Jeep Wranglers across terrain ranging from coastal lava flows to steep pasture trails.

MOLOKAI RANCH recently debuted Mountain Bikers Paradise, which allows cyclists access to more than 100 miles of trails, ranging from the smooth and groomed Keoki's 'Trail to the challenging Blood Drive. The Skills Corral features obstacles, high and low ramps and teeter-totter ramps that give beginners the feel of riding on dirt and test the skills of experienced riders.

Hiking, kayaking, snorkeling, and mountain biking are among the daily diversions offered by the HAWAII RAINFOREST FOUNDATION, a nonprofit organization whose mission is to enhance visitors' awareness of the Island's fragile ecosystem and to protect and preserve the beauty of local trails and beaches. On guided tours that last at least three hours, participants learn about Oahu's geology, archaeology, mythology, history, and flora and fauna. Groups are limited to 17 participants; reservations are handled on a first-come, first-serve basis.

DOLPHINS, THE DRAW AT KAHALA MANDARIN ORIENTAL

If you're planning to participate in the KAHALA MANDARIN ORIENTAL's Dolphin Encounter program during your stay at the property, you should plan ahead. Reservations are booked months in advance during the holidays and the summer months.

Under the program, participants climb into the property's man-made lagoon with three trainers and two Atlantic bottlenose dolphins named Hoku and Liho.

For adults, there are two sessions. Both consist of learning commands that prompt the dolphins to leap into the air, and a course on helping to preserve the animals' natural habitat. Opportunities to pet and feed the dolphins also are part of the experience.

The children's program is more detailed and extends beyond dolphins.

For two hours, kids can touch turtles and learn about rays along with their dolphin encounter.

All programs are led by instructors from Dolphin Quest, an organization dedicated to the conservation of marine life through education.

Starting at $417 per night, the Kahala Mandarin Oriental's dolphin package includes accommodations, breakfast for two and a $200 Dolphin Quest credit for use with any dolphin program.

Photos are taken during the Dolphin Encounter and can be purchased for $12.50 per print. Room rates start at $385 for a ridge view. The 30-minute Dolphin Encounter costs $129 for adults.

The one-hour Dolphin Adventure runs $189 for adults and the children's Quest for Knowledge costs $154. Proceeds do not include tax.
