THE HOMESTEAD in Hot Springs has its annual Food and Wine Spectacular in April, as well as six cooking school weekends. (800) 838-1766.

Hawaii has surf, sun, hula-dancing girls and a tropical climate. But how is the food?

With HAWAII FOOD TOURS, you can experience the culinary aspect of Hawaii. And you can do it under the guidance of no less an authority than Matthew Gray, a former professional chef and a restaurant reviewer for the "Honolulu Advertiser".

For food lovers, this tour is the best way to experience the Aloha State. According to Gay, "When you look at a one-week vacation, you're talking about 21 meals. With Hawaii Food Tours, you know you are going to have at least one day or night of great eating.

Gray is a native of Los Angeles, where he was private chef for such big names as Heather Locklear, Tommy Lee and Dan Aykroyd. He opened Hawaii Food Tours in December, 2004.

The company offers three programs:

The "Hole in the Wall" tour runs daily from 10 a.m. to 2 p.m. and takes guests through a kaleidoscope of restaurants, including Pho Nam (Vietnamese), Zaffron (Indian), Sugoi (local-style bento and plate-lunch dining, which Gray called "a combination of different cultural foods") and Liliha Bakery for its signature cocoa puffs, which are pastries filled with ice cream. Some surprises are also promised. The price is $59 per person.

The "Hawaiian Feast in Paradise" is offered Mondays and Thursdays, 5:30 p.m. to 8:30 p.m. and includes a Hawaiian feast at Don Ho's Island Grill. The cost is $99 per person.

The "Gourmet Trilogy tour for Food & Wine Lovers" operates on Tuesdays and Wednesdays, 5:30 p.m. to 8:30 p.m. and includes a multicourse wine dinner at three restaurants: one for appetizers, one for an entree and a third for dessert. The price is $149 per person.
